Tuesday Night Supper


The only thing better than potatoes fresh from the garden...






are fresh potatoes that have been whipped up into Mashed Potatoes Supreme!


Mashed Potatoes Supreme

                                 8 large potatoes                               1/2 cup milk
                                 1 (8 oz.) pkg cream cheese                  salt & pepper to taste
                                 1/4 cup butter

Peel and quarter your potatoes.  Boil 25 minutes then drain them.  Cube the cream cheese and butter.  Mash the potatoes; add cream cheese and butter.  Mash some more to blend.  Slowly add the milk while continuing to mash the potatoes.  Stir in salt and pepper.  

Yum yum!

We ate our taters with some baked chicken, green beans, pears...




Parmesan Ranch Chicken

                      4 chicken breasts, skin removed          1 pkg Hidden Valley Ranch dressing mix 
                                 1 c. grated Parmesan cheese                1 egg, slightly beaten
                                 1/4 c. butter, melted

Grease a 13x9 pan.  Preheat the oven to 425 degrees.  In a plastic bag, combine Parmesan and dressing mix.  Dip each piece of chicken in the egg, then shake in the cheese mixture to coat it.  Transfer to the pan and bake for 45 minutes, pouring the melted butter over the chicken after 20 minutes.  

And don't forget the just-picked goodness of a sliced summer tomato!
